I Want My Sushi Cake!

Kudos to Sushi Lover Bennett in Tallahassee for submitting this photo and description of my new Most Wanted Sushi dish:  Sushi Cake, which is a pressed roll of thin slices of nigiri style sushi between layers of sushi rice.  Check out the description and photo from Bennett:

A special set of plastic boxes was designed by the lead chef at Sakura Sushi and Grill to shape the the layers of rice and fish into a large square about 6 inches by 3 inches.  The square is then cut into six pieces about the size of  standard nigri sushi as seen in the photo below.
 
The pictured version of the sushi cake contains salmon, tuna, avocado, and white fish, with lemon zest and wasabi.  While the taste is similar to a standard rainbow roll, the cake is lighter and has a spongy feel  compared to regular rolls.
 
The layering of the rice and sushi allows a mixture of flavors and textures, while still presenting the sushi in a style similar to nigri.  Sushi lovers who prefer rolls over nigri like the sushi cake because of the variety of flavors in each bite of the cake, while avoiding the taste of seaweed paper that some sushi lovers do not prefer.
 
Sakura Sushi Chef Jay and Sushi Host Han claim that the sushi cake is a one of kind item in North Florida, but that innovative styles and presentations like the sushi cake are growing in popularity in Japan, particularly in the fast food restaurants that serve younger crowds.  They say that sushi lovers in California and Arizona can expect similar rolls soon.
